Facilities
At Prairie Harvest, we decided a long time ago, that we would take time to craft our fine pasta the old-world way. Slow-dried, using only the very best ingredients.

All equipment used in the production and packaging of our pasta is Italian-made imported from directly from Italy. It is important for you to know that our Prairie Harvest pasta products are slow-dried. We believe that this makes a big difference to the final quality of our products.

As the outside of the pasta tends to dry more quickly than the inside, varying levels of moisture develop from the surface to the interior of the pasta. If dried too quickly, pasta can crack, giving the product a poor appearance and very low strength. Cracking can occur, even several weeks after the product has left the production line.

If the pasta is dried too slowly, it can spoil during the drying process.

Therefore, it is crucial that the drying cycle be tailored to meet the requirements of each type of product to be manufactured.

Many manufacturers dry their pasta in less than 5 – 6 hours however at Prairie Harvest, we go the extra mile. Despite the extra costs, we take up to 17 hours to dry our products so you get the best taste, the best texture, the best nutrition… and compliments galore!

Slow drying means your pasta holds up to over-cooking. You will always win when you buy Prairie Harvest.
